Mix 85 gr sugar, 120 gr salt,1 tsp white pepper, sprinkle mixture on filet beneath and on top, sprinkle dill, place a weighted cutting board on filet and marinate at room temp 2-4 hours, then place in fridge 24-48 hours.

Not so hard !
